Beef Stew
A great, traditional stew with chunks of beef, potatoes and carrots. As a variation, you can make with pork instead. Frozen peas added just before serving give a nice color also.

This is a classic, with a rich, creamy brown gravy with sour cream. Mushrooms optional
Braised Brisket Provencal
Slowly cooked brisket of beef with root vegetables and aromatics. Somewhat in the style of Provence
Chicken Fried Steak
Well this ain't French, that's for sure. A beef cutlet, pounded thin, breaded and served with cream gravy and mashed potatoes.
Corned Beef an Cabbage
Just like you'd find served in New Orleans' best restaurants, and a tradition for New Year's Day.
Cube Steak and Mushroom Gravy
Cube steaks are floured, grilled, and finished with gravy in the oven. Very tender and great with mashed potaotes, rice, pasta, etc.
Meat Loaf
There are thousands of meat loaf recipes out there. This is one of the best. You can omit the ketchup topping and serve with brown gravy instead.
Meatballs and Gravy
Tender meatballs simmered in a scratch-made brown gravy. You can make this as a stew by adding carrots, potatoes and peas if you like.
Oven BBQ Beef
This is a truly delicious, and very easy dish to make. It has a slightly sweet, tangy flavor. Great as a BBQ plate item or for sandwiches.
Kind of Complicated Pot Roast
Sort of a joke. There are a few extra steps, but in reality this is an easy roast to prepare, and it has big flavor. The onions cook down into the gravy and add a silky texture. And the vegetables soak in the rich beef flavor.

Standard preparation of an ever-popular entree.
Salisbury Steak
Tender, seasoned chopped steaks smothered in brown gravy.
Swedish Meatballs
These are prepared like you would the Meatballs & Gravy (above), but the nutmeg and other flavors really come through, making this a pleasant change from the ordinary.

Pork
Breaded Pork Cutlet
Chicken fried steak style pork cutlet. You can serve with cream or brown gravy.
Herbed Pork Pot Roast
Boston Butt is slow cooked with vegetables to an incredible tenderness with rich flavor. It's a variation on the Beef Brisket Provencal.
Honey Glazed Pork Chops
Center-cut chops with a brown sugar and honey glaze. Serve with a savory side like Garlic Mashed Potatoes, or Rice Pilaf.
Honey Pecan Pork Chops
Boneless chops are pounded thin, grilled and topped with a sauce of honey, butter and pecans. Hard to believe how well these go together, but they do.
Pork/Pecan Crusted Pork with Pumpkin Butter
Continuing our theme of pecans and pork, here we use pacans as a coating for pork cutlets, which are then paneed and served with a house made pumpkin butter. This is a nice Sunday dinner item with poultry, or a holiday item.
Perfect Pulled Pork.pdf
This is a two-step recipe but very easy. The pork is brined overnight, then baked with seasonings low and slow in the oven. The result is falling apart tender pork, seasoned all the way through and perfect for sandwiches or as a BBQ plate item.
Breaded Pork Chop
Pork Chops Florentine
Lightly floured, seasoned chops are grilled, then baked atop a bed of spinach with cream sauce. You can use Pork Steaks or Cutlets in place of chops as a less expensive alternative.
Pork Cutlet Parmigiana
A variation on Veal Parmigiana, using pork cutlets instead. We think the pork is an improvement over the original.

Pulled Pork Stuffed Potato, Memphis Style
BBQ joints all over Memphis serve this popular item. Baked Potatoes stuffed with our pulled pork and topped with cheddar cheese. If you go to Memphis, try the Commissary in Germantown. The food is great and they have this very item (but we think ours is better :-)
